The flower is Jasminum grandiflorum, and its whole economics are set by one fact of its biology: it releases its scent at night. Everything expensive about jasmine follows from working around that.
Why it has to be picked in the dark
Jasmine blooms open after sundown and their volatile output peaks in the hours before dawn, which is when the pickers are in the fields. Harvest happens by hand, in darkness, and the flowers go to the extraction house the same morning. Wait for daylight and a measurable share of what you were paying for has already left for the sky.
Nor can the work be mechanised. The flowers are picked individually, open and undamaged, and a bruised blossom is a spoiled one. Indian production runs in flushes from around March through October. Egypt works the Nile Delta on its own calendar.
It is not an essential oil, and it never can be
There is no such thing as a proper steam-distilled jasmine. Heat destroys the balance that makes the material work: the delicate esters go, and what survives is dominated by the heavier, more animalic end. Attempts at distillation return around 0.05 per cent, a fifth of what solvent extraction gets, and the result is not jasmine in any recognisable sense.
So jasmine is a solvent extract, always. The flowers are washed to produce a waxy concrete, and the concrete is washed again with alcohol to leave the absolute: a dark orange to reddish-brown liquid that deepens towards chocolate as it ages, and one of the most tenacious materials in perfumery. Four days on a smelling strip is normal. The wax left over is not wasted either, it goes into cosmetics and candles.
Hexane, and doing without it
The industry-standard solvent for that first wash is hexane, and it is used because it is cheap, efficient and easy to strip off. The residue in a finished absolute is tightly regulated and very low, which is why hexane extraction remains normal practice and is not, in itself, a scandal.
What has changed is that it is no longer the only option. Liquid and supercritical CO2 will do the same job with no petrochemical solvent at all, and the published comparisons are interesting: CO2 extraction of J. grandiflorum gives a comparable yield to the conventional route, a cleaner and less fatty product, and better recovery of exactly the compounds that matter most, including benzyl acetate, the jasmonates and the green hexenyl notes.
The jasmine I carry is a hexane-free extract. I do not claim it makes the material safer than a well-made conventional absolute, because that is not the honest argument. What it does mean is that no petrochemical solvent touches the flowers at any stage, and on a material this concentrated and this expensive, that is a choice worth paying for.
India and Egypt are not the same jasmine
This is the part that surprises people. The species is identical, the method is comparable, and the two origins still smell measurably different. A gas chromatography study comparing commercial absolutes across producing countries put it plainly.
Indian material is the more intense of the two. It reads as full blooming jasmine with a narcotic, animalic, indolic top note, a sweet fruit character often described as banana-like, and a distinct green complex underneath. The dry-down runs warm and animalic and can hold on a strip for four days.
Egyptian material is less indolic and less narcotic, with more green and floral lift, a slightly oilier body and a tea-like note that the Indian does not have. It sits a little lighter and fades sooner, around three days.
Neither is the better jasmine. Indian is the one you reach for when you want the flower to dominate, Egyptian when you want it to behave.
My jasmine is Indian, and Egyptian is available to order. That is a real choice rather than a marketing distinction, and if you are building something where jasmine is the centre rather than the seasoning, it is worth asking which one you actually want.
Indole, and why jasmine smells slightly wrong
Jasmine absolute runs to well over two hundred compounds, but the one everybody ends up talking about is indole. On its own, in any quantity, indole is frankly unpleasant, and it is the reason people describe fine jasmine as animalic or even faintly dirty.
In place, at a fraction of a per cent, it is precisely what stops jasmine from smelling like air freshener. It supplies the impression of a living flower rather than an idea of one. Take it out and you get something clean, pretty and completely lifeless, which is the reliable tell of a reconstruction. If a jasmine smells entirely nice, it is probably not jasmine.
