There are thousands of roses in the world and almost none of them are the rose that perfumers mean. When someone in this trade says rose, they mean Rosa damascena. It is not the showiest flower in the garden. Its gift is its scent, and it gives that up reluctantly, which is the whole story of why people have spent four millennia chasing it.

It starts in Central Asia, not Damascus

The name points at Syria and the flower's actual trail runs further east. Stone presses used to crush petals for rose water have been found near Samarkand dating back roughly four and a half thousand years, and there are records of crude petal distillation from around the Afghanistan and Uzbekistan border going back further still. By around four thousand years ago the Akkadian cuneiform tablets get specific about it.

So the practice is older than most of the civilisations usually credited with it. What changed later was not the idea of extracting rose scent, but how well it could be done.

Ibn Sina and the leap to oil

Rose water is easy. Rose oil is not. The step from a fragrant water to a concentrated oil is usually credited to Ibn Sina, the Persian physician and philosopher known in the West as Avicenna, working in the tenth century. The alembic stills displayed in the museum at Kazanlak today would be recognisable to him: the design has barely moved in a thousand years.

There is a lovely companion story attached to attar of roses, told about a Mughal empress who noticed an oily film gathering on rose water in the palace canals under the sun, skimmed it off, and found the concentrated soul of the flower. Whether or not it happened, it describes the physics correctly, which is why it has survived as well as it has.

The road to the Balkans

From Persia the knowledge travelled with the trade routes into Mughal India and across the Ottoman Empire, and it was the Ottomans who carried damask rose cultivation into the Balkans. Exactly when is genuinely disputed. Some accounts have Alexander's returning soldiers bringing roses into Thrace far earlier. Others credit a Turkish judge in the fifteenth century. The most commonly cited date for distillation actually beginning in the Bulgarian valley is 1680, and the industry there is usually described as a little over three hundred years old.

What is not disputed is that the flower liked it there. The valley between the Balkan range and the Sredna Gora, around Kazanlak, Karlovo and Kalofer, has cool nights, morning mist and poor stony ground, and the roses grown in it produce oil with less of the waxy fraction that makes rose otto set solid in the cold. Awkward conditions, better oil.

Kazanlak means "the place of cauldrons"

The town's name comes from the Turkish kazan, the distillation cauldron, and by the middle of the nineteenth century there were well over a thousand of them working in the district in a single season.

The Bulgarian contribution was not the still but the method. Drawing on what they already knew from making brandy, growers there developed a double distillation: the first pass produces a rose water carrying dissolved oil, and rather than discarding it they redistil it to recover what the first pass left behind. It lifted the yield substantially without coarsening the result, and it is the reason Bulgarian rose otto set the world standard rather than merely competing for it.

Hand-picked petals to distil a single kilogram of rose otto, somewhere near 1.5 million individual flowers. That is a yield of roughly three hundredths of one per cent. A working grower near Karlovo puts about 8,000 kilograms of petals through a season and takes out around 2.5 kilograms of oil.

The harvest itself has not modernised much, because it cannot. Flowers are picked by hand from first light, since the oil is at its peak in the cool before dawn and disperses as the sun climbs. A picked rose does not keep, so the day's harvest goes to the still the same morning. Pickers still put the first rose of the day behind one ear.

Otto and absolute are not the same thing

Two forms reach the market and they are genuinely different materials. Rose otto is the steam-distilled oil, the classic attar, bright and slightly green, prone to turning semi-solid in the cold and melting clear in the hand. Rose absolute is drawn out with solvent instead of steam, which keeps compounds that heat would drive off, and the result is deeper, warmer and closer to the living flower.

The rose I carry is a Bulgarian absolute, and that is a deliberate choice. Where otto leans bright and clean, the absolute holds onto more of what the bloom actually smells like: fuller, a little honeyed, closer to putting your face into the flower. It is the form perfumers reach for when they want the rose to feel present rather than polite.

A rose picked at noon is just a flower. A rose picked at dawn, and distilled by lunch, is perfume.

Why it is still worth it

Damask rose runs to something like three hundred separate compounds, and a number of them have never been reproduced synthetically. That is the honest answer to why the reconstructions do not land. They are competent, they are cheap, and anyone who has smelled the two side by side can tell immediately which is which. The gap is not one missing note. It is the hundred small ones underneath.

In the range
